With over four decades of vision-driven leadership across hospitality, wellness, food, real estate, and community spaces, Roy’s work is united by one principle: create with purpose, lead with passion, and always leave things better than you found them.
He has launched and grown over 20 ventures ranging from a nationally recognized consumer brand, to award-winning dining destinations, to vibrant community hubs built entirely from shipping containers. Whether founding one of the country’s most distinctive food halls (like Green Jeans Food Hall) or scaling 505 Southwestern into a household name, Roy’s ventures are as diverse as they are impactful.
But he’s not just a business mind—he’s a wellness advocate, athlete, lifelong learner, and connector of people. From Ironman triathlons to yoga certification, from building neighborhood centers to serving on nonprofit boards, Roy lives what he builds: a life of vitality, resilience, and joy.

• Green Jeans Food Hall — A fully leased, $3.8M shipping container plaza that redefined placemaking in Albuquerque and launched a new standard in localist, wellness-forward commercial development.

• Tin Can Alley — A multi-level open-air food hall and event space in Albuquerque that expanded the Green Jeans model with more square footage and modern design.

• 505 Southwestern — A New Mexico-grown salsa and chile brand that reached national distribution through Costco, Kroger, Whole Foods, and others under Roy’s leadership.

• Bailey’s on the Beach — A boutique eatery and urban loft redevelopment project that reimagined a derelict space into one of Nob Hill’s most vibrant corners.

• Ryde Shack — A boutique fitness studio combining cycling, yoga, TRX, and community programming before “wellness hubs” were mainstream.

• The Court Club of Durango — A full-service athletic facility and one of Roy’s earliest forays into integrating wellness, recreation, and architecture.
